This applies for both GPU and VRAM temperature sensors.
The GPU will thermal throttle to protect itself. The GPU will literally limit its performance by itself. This limit will be throttling the GPU until its temperatures drop to a normal level.
You can read more about the optimal GPU mining temperatures here.
QuickMiner has a built-in feature that will automatically recognize thermal throttling and warn you about it. Learn more about it here.
What is GPU temperature?
GPU temperature is the temperature of the Graphics Processing Unit. It is the most important sensor on the graphics card, as the GPU is the one carrying most of the load when gaming or performing other GPU intensive tasks.
Normal under-load GPU temperature is around 65°C.
It is important to differentiate between the GPU and the Graphics Card. The GPU is a processor on the graphic card. Think of a GPU as a CPU of the graphic card.

What is VRAM temperature?
VRAM stands for Video RAM. It is the VRAM (memory) on your graphics card. The VRAM temperature is the temperature of your graphics card VRAM.
Optimal VRAM temperature is between 80°C and 95°C. When mining memory intensive algorithms, you can expect higher temperatures on the VRAM.
Some of the RTX 3000 series models (RTX 3070 Ti, 3080, and 3090) experience issues with VRAM overheating. This is a manufacturing problem. You can potentially solve this issue by replacing the thermal pads and repasting the graphics card. Note that doing this might void your warranty and could damage your graphics card if done improperly.
You can think of VRAM as a DRAM on your PC. Each PC has CPU and DRAM. Same goes for graphics cards. Each graphic card has a GPU and VRAM.
