Every virtual miner is backed by real hashrate. When all the capacity for a package is in use, the package is shown as sold out.
Packages become available again as other packages finish, so check back later or choose a different package.
For the Flexible Miner, the minimum and maximum mining speed you can choose also depends on the capacity available at the moment.
